I pickled some shoots in the summer and used pollen but wondered if anyone had tips/experience on harvesting roots in winter.

Ive collected and used Reedmace during winter, and is a viable crop. You need to look for the fresh roots, rather than those which have produced the flower (as most of the energy has gone into flower production). It's a case of being selective in your searching. Have fun.
PS: take a hand warmer or two, your hand will suffer, well mine did!!!
