Just wondering What wild edibles you guys are looking forward to coming up. Mine are:
the saffron milkcaps ( I salted some as an experiment and they are great ) and chesnuts ( particularly chesnut dumplings in a game stew ) and spring rising and cambium growth ( I will be steaming and smoking more blocks )
And having a coffee made from melted snow on a frosty morning.

Hedgehog mushrooms quickly fried in butter for breakfast after an early morning forage. Heaven.
Wouldn't mind joining previous posters longings either!

A decent haul of ceps. Since I decided to make powder this year I haven't found any.
Spring growth Japanese knotweed now I've found a location for it.
Chestnuts, I walk past loads of trees every day going in to work, they are looking close to ready now.
I'm always hopeful for a giant puffball, want me some puffburgers.
Also hoping to add a couple of new things this year, hoping to find velvet shanks.

Yeah, I know but they look so tantalising!
I actually managed to take a few of my colleagues out to the sweet chestnut trees last year, they all tried making maron glace and just roasting them. I think they were quite impressed but also didn't want to admit that to the "weird mushroom guy". Amazing how many you can collect in a lunch break!

I managed 40 kilos in a day last year. Sold most of them in the end because I couldn't process them

I managed that in an hour.
OK, I'm lying, that's insane!

Took about 4 or so hours. There's about 50+ mature trees in woodland so there's loads and loads in a good year. I just pick up the big ones.

Do you shell (well I guess it's husk) as you go?

Tho so are ceps this year . At this time of year I don't really look forward to anything - it's absolutely the best time of year, mushrooms are all up and the seas are all full of fish and shellfish.

I just stamp on the husks if theyre still inside to get them out, I never collect them in the husk. Last year i was a little late and mostly already come out but it hadnt been damp and so many squirrels didnt even seem bothered so fine to collect like that.
But yeah would always either use gloves or just use my boots

Glad I'm not the only stamper. Seemed the simplest way but I often miss the obvious

Yup, sweet chestnuts for me. I only know of a couple of trees though in Glasgow :-( I'd love to find hazelnuts too.

I do need to get up and visit scotland, might be heading up in Jan on a Chaga hunt. Most bits of ancient woodland will have a bit of chestnut mixed in or large parks etc. You can use some of the online woodland trust type websites to scout out possible areas. I have a known area near me where i can collect 20kilos plus with ease so worth travelling to collect.
